I love smoothies! I can’t think of a better way to take in a bunch of nutrients in one whack! Today’s smoothie is no different. It combines some healthy greens along with fresh and frozen fruits.

The spring greens are rich in a combination of vitamins A, C, and K; several B vitamins (including folate); and potassium. Mandarins deliver over a quarter of the DV for vitamin C, which is important for skin health and wound healing. Mandarins also provide important minerals. While they’re not a rich source of copper, they boast more of it than most fruits. Along with vitamins and minerals, one medium (88-gram) mandarin packs 8% of the DV for fiber. Strawberries are an excellent source of vitamin C and manganese and also contain some folate (vitamin B9) and potassium. But the superstar is the blueberries! They have more antioxidents than any other fruit which can lower your risk of a lot of illnesses. The flavanoids help with brain health. And they’re loaded with polyphenolic compounds that help your blood vessels, blueberries count as a cardioprotective food.

  • 1 cup organic spring mix
  • 3 mandarins
  • 1/2 cup strawberries
  • 1/2 cup blueberries
  • 1/2 cup water
  • ice to taste
  • Blend until smooth and enjoy.

So I made it through a week of documentation. Now I’m going to try to keep it up. Have a great day y’all and stay safe!
